- Here's a simple recipie that I use for sweet potato (sometimes also
- called "yams") casserole:

- Candied Sweet Potato

- 1 - 1.5 lb (500 - 800 g) Sweet Potatoes
- 1/2 cup (100-150 ml) Brown Sugar
- 1/4 cup (50 - 75 ml) Butter or Margerine, cold
- Casserole dish with cover

- Peel and slice the sweet potatoes. Place in casserole dish.
- Coarsely chop butter and sprinkle pieces over sliced potatoes.
- Sprinkle brown sugar on top of potatoes.
- Cover dish, and bake in 350F (170 C) oven for approximately
- 40 mins or until sweet potatoes are soft.

- Serve as a side dish with either fowl or beef.

- Note: you can cut the cooking time of this dish by pre-cooking
- the whole sweet potatoes (I microwave on high for 10 mins).
